This an easy eggplant stew that will taste so great with your rice.
Try this out and you ll love it for sure.
4 eggplants, washed, peeled and cut into medium pieces
1 Large fish, cut into 4 pieces (you can use any fish of your choice)
2 fresh tomatoes, mash one of the two tomatoes
1 tbsp tomato paste
2 onions, slice one of the 2 onions
1 bouillon cube
1 tbsp dried shrimp, optional
2 tbsp of vegetable oil
Chili powder to taste
Salt to taste
2 to 3 cups of water
